There are many beverages in this world that span the spectrum of flavor, quality, and sophistication. With Scotch one may choose a simple grain blend to mix with soda, or a blended malt over ice, or a masterfully distilled single malt in a snifter, slowly savored. With beer one may ice down an American Lager, or pour out a liter of rich, pale Bohemian Pilsner, or perhaps a Pint of nut brown ale, or even a goblet of bottle aged ales crafted by Monks with centuries of experience.
So too, Sake. Like Beer, and Whiskey, Sake is a beverage that starts its life from grain, in this case rice. The world of Sake is also populated with large bottlers producing simple, cheap product that is often heated with some take out sushi rolls; however, there are also "single brewery" Sake produced in a range of styles, with a range of differently processed rice, each one under the auspices of a school of Master Brewers.
Over the next few months we at Post will be building our fine Sake selection, as we find it as fascinating and varied as the Single Malt or Fine Wine world. Here are a few key terms to learn, and a few choice selections to help us through our exploration. Remember...these are expertly brewed and deserve fine glassware. Only then you can enjoy the nuanced aromas, the rich or light, or sometimes even crisp body, as well as complex finish.
Honjozo: Sake fortified with a little extra alcohol.
Junmai: Pure sake, nothing more than rice milled to at least 70 percent, water and koji.
Junmai ginjo: Made with rice milled to at least 60 percent of its original size. If any alcohol has been added, the label will read simply "ginjo."
Junmai daiginjo: Rice milled to at least 50 percent. When alcohol has been added, it's simply daiginjo.
Junshu: "Rich type" full bodied, strong flavor, perfect with hot or rich sauces.
Koshu: Intentionally aged sake.
Kunshu: "Fresh type" a fragrant sake, crisp finish.
Kijoshu: Sweet sake.
Namazake: Unpasteurized sake.
Nigori: Sake bottled with the lees (kasu) Unfiltered Sake.
Soshu: "Light type" Smooth finish.
Toji: The head brewmaster, included on some newer bottles.
